
Spaghetti Carbonara
A traditional Italian pasta dish made with eggs, cheese, pancetta, and pepper, creating a creamy sauce without using cream.

Preparation
- Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
- While the pasta is cooking, cut the pancetta into small cubes.
- In a bowl, whisk the eggs and mix in the grated Parmesan cheese until well combined. Add black pepper to the mixture.
Cooking
- In a large skillet over medium heat, cook the pancetta until crispy.
- Once the pasta is cooked, reserve a cup of pasta water and drain the rest.
- Add the hot spaghetti directly to the skillet with pancetta and remove from the heat.
- Quickly pour the egg and cheese mixture over the pasta, tossing continuously to create a creamy sauce, adding reserved pasta water as necessary to achieve desired consistency.
Serving
- Serve immediately with additional grated Parmesan and black pepper on top.
Notes
For best results, use fresh, high-quality ingredients. Traditional Carbonara does not use cream.
