Spaghetti Carbonara

Ingredients
  

Pasta and Sauce Ingredients
  • 400 grams spaghetti
  • 150 grams pancetta or guanciale
  • 3 large eggs room temperature
  • 100 grams Parmesan cheese grated
  • 1 teaspoon black pepper freshly cracked

Method
 

Preparation
  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
  2. While the pasta is cooking, cut the pancetta into small cubes.
  3. In a bowl, whisk the eggs and mix in the grated Parmesan cheese until well combined. Add black pepper to the mixture.
Cooking
  1. In a large skillet over medium heat, cook the pancetta until crispy.
  2. Once the pasta is cooked, reserve a cup of pasta water and drain the rest.
  3. Add the hot spaghetti directly to the skillet with pancetta and remove from the heat.
  4. Quickly pour the egg and cheese mixture over the pasta, tossing continuously to create a creamy sauce, adding reserved pasta water as necessary to achieve desired consistency.
Serving
  1. Serve immediately with additional grated Parmesan and black pepper on top.

Notes

For best results, use fresh, high-quality ingredients. Traditional Carbonara does not use cream.
