Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas well.
  3. In another bowl, cream together the softened butter and sugar.
  4. Add eggs and vanilla to the butter mixture, beating until smooth.
  5. Mix in the mashed bananas.
  6. In a separate bowl, whisk together the flour, baking soda, and salt.
  7. Slowly add the dry ingredients to the wet ingredients, mixing until just combined.
  8. Fold in walnuts or chocolate chips if using.
Baking
  1. Pour the batter into a greased loaf pan.
  2. Bake for 60 minutes, or until a toothpick inserted comes out clean.
  3. Allow to cool in the pan for 10 minutes, then transfer to a wire rack.

Notes

For a rustic look, avoid overmixing and embrace imperfections in the crust. A sprinkle of turbinado sugar on top before baking adds a charming finish.
