Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, mash the ripe bananas until smooth.
- Add the granulated sugar, brown sugar, and softened butter to the mashed bananas and mix until well combined.
- Beat in the eggs and vanilla extract until fully incorporated.
- In a separate bowl, whisk together the all-purpose flour, baking soda, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in any optional mix-ins like walnuts, pecans, or chocolate chips if desired.
Baking
- Drop spoonfuls of the dough onto a lined baking sheet, spaced about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers are set but still look slightly soft.
Cooling
- Remove from the oven and allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
