Ingredients
  

Cookie Ingredients
  • 1 cup Unsalted butter, softened Make sure it is at room temperature.
  • 1 cup Brown sugar Packed.
  • 1 cup Granulated sugar
  • 2 large Eggs Room temperature.
  • 2 cups Freshly grated carrots Do not use pre-shredded carrots.
  • 2 cups All-purpose flour Spoon into the cup and level off gently.
  • 1 tsp Baking soda
  • 1 tsp Baking powder
  • 1 tsp Cinnamon Freshly ground preferred.
  • 1/2 tsp Nutmeg Freshly grated for best flavor.
  • 1/2 cup Chopped walnuts Optional.
  • 1/2 cup Raisins Optional.
Cream Cheese Frosting Ingredients
  • 8 oz Cream cheese, softened
  • 1/2 cup Unsalted butter, softened
  • 3 cups Powdered sugar Sifted.
  • 1 tsp Vanilla extract

Method
 

Prepare the Dough
  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the eggs, then mix in the grated carrots.
  4. In another bowl, combine the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in walnuts and raisins if using.
  7. Chill the dough in the refrigerator for 30 minutes.
Bake the Cookies
  1. Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
  2. Bake for 10-12 minutes, until the edges are lightly golden.
  3. Let cool on the baking sheet for 5 minutes, then transfer to wire racks to cool completely.
Make the Frosting
  1. In a mixing bowl, whip the cream cheese and butter together until creamy.
  2. Gradually add powdered sugar and beat until smooth. Mix in vanilla extract.
Assemble
  1. Frost the cooled cookies with cream cheese frosting.
  2. For a sandwich cookie, spread frosting between two cookies.

Notes

Store cookies in an airtight container with parchment paper between layers to maintain their softness.
