Method
 

Preparing the Cheesecake Centers
  1. Beat the softened cream cheese with sugar, vanilla, and egg yolk until smooth.
  2. Drop spoonfuls onto a parchment-lined tray and freeze them until solid.
Encasing the Filling
  1. Take a portion of the cookie dough and flatten it into a disc.
  2. Place a frozen cheesecake ball in the center, then wrap the cookie dough around it, sealing completely.
