Preparation
- Preheat your oven to 350°F (175°C).
- Mash the overripe bananas in a large bowl until smooth or with small lumps, as desired.
- In a separate bowl, mix melted butter with brown sugar, egg, and vanilla extract until well combined.
- In another bowl, combine flour, baking soda, and salt.
Mixing and Baking
- Gently fold the dry ingredients into the wet mixture until just combined, being careful not to overmix.
- Fold in chocolate chips (and nuts or spices if using).
- Pour the batter into a greased loaf pan.
- Bake for 60 minutes or until a toothpick inserted in the center comes out with moist crumbs.
Cooling
- Allow the banana bread to cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.
Notes
For a moister loaf, consider adding buttermilk or yogurt. Experiment with different types of chocolate or toppings for variety.
