Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a large mixing bowl, mash the ripe bananas thoroughly.
- In a separate bowl, mix the melted butter or oil with the eggs and vanilla extract until well combined.
- Fold the wet ingredients into the mashed bananas.
Combining Dry Ingredients
- In another bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, and salt.
- Gradually fold the dry ingredients into the wet banana mixture until just combined. Do not overmix.
Baking
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the banana bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
Store leftover banana bread in an airtight container at room temperature for up to 3 days. To keep it longer, refrigerate or freeze slices.
