Preparation
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and sea salt.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Fold in the chopped couverture chocolate.
- Chill the dough in the refrigerator for at least 24 hours.
Baking
- Scoop tablespoons of chilled dough onto a baking sheet lined with parchment paper.
- Bake in the preheated oven for 10-12 minutes, or until the edges are set but centers are still slightly underbaked.
- Remove cookies from the oven and allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For added flavor complexity, consider using a blend of dark and white chocolate or adding nuts and dried fruits. Pair with espresso or a glass of red wine for an elevated experience.
