Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and sea salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. Fold in the chopped couverture chocolate.
  7. Chill the dough in the refrigerator for at least 24 hours.
Baking
  1. Scoop tablespoons of chilled dough onto a baking sheet lined with parchment paper.
  2. Bake in the preheated oven for 10-12 minutes, or until the edges are set but centers are still slightly underbaked.
  3. Remove cookies from the oven and allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For added flavor complexity, consider using a blend of dark and white chocolate or adding nuts and dried fruits. Pair with espresso or a glass of red wine for an elevated experience.
