  • 1 egg egg wash Whisk with a splash of water.
For the Filling
  • 2 cups fresh or canned cherry pie filling If using canned, doctor with extracts and spices.
  • 1 teaspoon vanilla bean seeds Freshly scraped for best flavor.
  • 1 teaspoon lemon zest Enhances the flavor of cherries.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry sheets on a floured surface and cut into squares.
  3. Prepare the filling by combining cherry pie filling, vanilla bean seeds, and lemon zest in a bowl.
Assembly
  1. Place a dollop of cherry filling in the center of each pastry square.
  2. Fold the squares into your desired shape (like pinwheels or envelopes).
  3. Brush the tops with the egg wash.
Baking
  1. Bake in the preheated oven for 15 minutes or until golden brown.
  2. Remove from the oven and let cool on a wire rack to maintain the crunch.

Notes

These pastries can be prepared ahead of time. Bake them fresh for your guests! For a chocolate variation, drizzle melted dark chocolate over the top.
