Preparation
- Melt butter (or coconut oil) and sugar together in a saucepan over medium heat, stirring constantly until the sugar dissolves and the mixture begins to boil.
- Remove the pan from heat and stir in the peanut butter (or alternative) until fully melted and incorporated.
- Quickly fold in the oats and cocoa powder (or vanilla) until combined.
Assembly
- Drop spoonfuls of the mixture onto parchment paper, shaping them as desired.
- Refrigerate for at least 30 minutes or until firm.
Notes
Store in an airtight container in the fridge for up to a week. Freezing is an option for longer storage. Customize with nuts, extracts, or toppings as desired.
