Wet Ingredients
  • 1 cup Peanut butter (or alternative) Can substitute with almond butter, cashew butter, or sunbutter.
  • 1/2 cup Butter (or coconut oil) Use coconut oil for a dairy-free option.
  • 1/2 cup Sugar (or sweetener) Granulated or brown sugar, can use maple syrup or honey for a healthier version.
Dry Ingredients
  • 2 cups Rolled oats Quick oats can be used, but rolled oats provide better texture.
  • 1/3 cup Cocoa powder (or vanilla) Vanilla extract can be used as an alternative for flavor.

Method
 

Preparation
  1. Melt butter (or coconut oil) and sugar together in a saucepan over medium heat, stirring constantly until the sugar dissolves and the mixture begins to boil.
  2. Remove the pan from heat and stir in the peanut butter (or alternative) until fully melted and incorporated.
  3. Quickly fold in the oats and cocoa powder (or vanilla) until combined.
Assembly
  1. Drop spoonfuls of the mixture onto parchment paper, shaping them as desired.
  2. Refrigerate for at least 30 minutes or until firm.

Notes

Store in an airtight container in the fridge for up to a week. Freezing is an option for longer storage. Customize with nuts, extracts, or toppings as desired.
