Method
 

Preparation
  1. In a large mixing bowl, combine the peanut butter, rolled oats, protein powder, and honey or maple syrup.
  2. Mix thoroughly until all ingredients are well combined.
  3. If desired, fold in chocolate chips, chia seeds, and vanilla extract.
  4. Using your hands or a spoon, form the mixture into bite-sized balls, approximately 1 inch in diameter.
Chilling
  1. Place the formed bites on a parchment-lined baking sheet.
  2. Refrigerate for at least 30 minutes to firm up.
