  • 1 cup cooked oats Use whole oats for best texture.
  • 1/4 cup matcha powder Use high-quality culinary grade matcha.
  • 1/2 cup raw cashew butter Can substitute with almond butter.
  • 1/2 cup pitted dates Soft, sticky dates work best.
  • 1 tbsp melted coconut oil Helps with binding if mixture is too crumbly.
Optional Variations
  • 1/4 cup shredded coconut For rolling the energy balls.
  • 1/4 cup freeze-dried raspberries For stuffing inside the balls.
  • 1/4 cup vegan white chocolate For drizzling over the energy balls.

Method
 

Preparation
  1. In a food processor, combine oats, matcha powder, cashew butter, pitted dates, and melted coconut oil.
  2. Pulse until mixture is well combined and forms a coarse, sticky ball.
  3. If mixture is too dry, add a splash of coconut oil or a little water.
  4. If too sticky, dust with oat flour.
Forming
  1. Scoop out tablespoon-sized amounts of the mixture and roll into balls.
  2. Optional: Roll in shredded coconut, press freeze-dried raspberries in the center, or drizzle with melted white chocolate.
Chilling
  1. Place the rolled energy balls on a plate and refrigerate for at least 30 minutes.

Notes

Store the energy balls in the fridge in an airtight container for up to two weeks, or freeze for up to three months for future cravings.
