Ingredients
  

Cookie Base
  • 2 cups all-purpose flour Add more if too wet.
  • 1/2 cup unsweetened cocoa powder Use good quality.
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup granulated sugar
  • 1/2 cup buttermilk Or homemade substitute with milk + lemon juice.
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons red food coloring For deep red color.
  • 1 teaspoon vanilla extract
Toppings
  • 1/2 cup powdered sugar For rolling the cookies.
  • 1/2 cup granulated sugar For initial rolling.

Method
 

Preparation
  1. In a bowl, mix flour, cocoa, baking powder, and baking soda.
  2. In another bowl, whisk together sugar, buttermilk, oil, eggs, food coloring, and vanilla until smooth.
  3. Combine dry and wet ingredients, mixing until just combined.
  4. Chill the dough in the refrigerator for at least 1 hour or overnight.
Baking
  1. Preheat the oven to 350°F (175°C).
  2. Roll chilled dough into balls, first coating in granulated sugar and then in powdered sugar.
  3. Place on a baking sheet lined with parchment paper, spacing them apart.
  4. Bake for 10-12 minutes, until slightly soft in the center.
  5. Let cool on baking sheet for a few minutes before transferring to a wire rack.

Notes

These cookies can be served with cream cheese frosting or drizzled with a simple glaze. Great for gifting, especially for Valentine's Day.
