Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the wet and dry ingredients for the cookie dough until just combined.
- Press about two-thirds of the dough into a prepared baking pan to form the bottom layer.
Making the Caramel
- In a saucepan, combine granulated sugar and water. Heat until it turns a deep amber color.
- Remove from heat and carefully stir in heavy cream and butter until smooth.
- Mix in the sea salt, let cool slightly.
Assembly and Baking
- Pour the homemade salted caramel over the cookie base and spread evenly.
- Crumble the remaining cookie dough over the caramel layer.
- Bake for 25-30 minutes until edges are golden brown.
- Allow to cool before cutting into bars.
Notes
Store in an airtight container for 3-4 days at room temperature or refrigerate for up to a week. Serve at room temperature or slightly warmed for best flavor.
