Ingredients
  

For the cookie base
  • 2.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup unsalted butter, softened
  • 0.75 cup granulated sugar
  • 0.75 cup brown sugar For that signature chew
  • 2 large eggs
  • 1 teaspoon vanilla extract Use high-quality for best flavor
  • 1.5 cups chocolate chips Semi-sweet or milk chocolate work well
For the salted caramel
  • 1 cup granulated sugar
  • 0.25 cup water
  • 0.5 cup heavy cream Warm it slightly before adding to caramel
  • 0.25 cup unsalted butter
  • 1 teaspoon sea salt Flaky sea salt is recommended

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the wet and dry ingredients for the cookie dough until just combined.
  3. Press about two-thirds of the dough into a prepared baking pan to form the bottom layer.
Making the Caramel
  1. In a saucepan, combine granulated sugar and water. Heat until it turns a deep amber color.
  2. Remove from heat and carefully stir in heavy cream and butter until smooth.
  3. Mix in the sea salt, let cool slightly.
Assembly and Baking
  1. Pour the homemade salted caramel over the cookie base and spread evenly.
  2. Crumble the remaining cookie dough over the caramel layer.
  3. Bake for 25-30 minutes until edges are golden brown.
  4. Allow to cool before cutting into bars.

Notes

Store in an airtight container for 3-4 days at room temperature or refrigerate for up to a week. Serve at room temperature or slightly warmed for best flavor.
