Ingredients
  

Cookie Dough Ingredients
  • 1 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
S'mores Filling
  • 1 cup milk chocolate chips For the gooey center
  • 1 cup dark chocolate chips For added depth of flavor
  • 1 cup mini marshmallows For topping

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add in the eggs one at a time and mix well after each addition. Stir in the vanilla.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet mixture and mix until just combined.
Baking
  1. Scoop out cookie dough and shape it into balls, placing them on a baking sheet lined with parchment paper.
  2. Make a small indentation in the center of each dough ball and fill it with a mix of milk and dark chocolate chips.
  3. Bake in the preheated oven for about 10 minutes, or until the edges are golden but the centers look slightly undercooked.
  4. Top each cookie with a few mini marshmallows and return to the oven for the last minute of baking to toast the marshmallows.
Cooling
  1. Let the cookies cool on the baking sheet for a few moments before transferring them to a wire rack to cool completely.

Notes

For a gooey center, remove cookies from the oven just before they look done. Enjoy with family and friends for a wonderful treat!
