Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream the softened butter with granulated sugar and brown sugar until light and fluffy.
- Beat in the egg and molasses until well combined.
Mixing Dry Ingredients
- In a separate bowl, whisk together the flour, baking soda, ground ginger, cinnamon, and cloves.
- Gradually add the dry mixture to the wet ingredients, mixing on low speed until just combined.
Chilling Dough
- Chill the dough for at least 30 minutes (optional but recommended) to deepen flavors and improve handling.
Baking
- Scoop rounded tablespoons of dough and roll them in granulated sugar.
- Place them on a baking sheet lined with parchment paper and bake for about 10 minutes, until edges are set but centers are slightly soft.
- Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
