Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream the softened butter with granulated sugar and brown sugar until light and fluffy.
  3. Beat in the egg and molasses until well combined.
Mixing Dry Ingredients
  1. In a separate bowl, whisk together the flour, baking soda, ground ginger, cinnamon, and cloves.
  2. Gradually add the dry mixture to the wet ingredients, mixing on low speed until just combined.
Chilling Dough
  1. Chill the dough for at least 30 minutes (optional but recommended) to deepen flavors and improve handling.
Baking
  1. Scoop rounded tablespoons of dough and roll them in granulated sugar.
  2. Place them on a baking sheet lined with parchment paper and bake for about 10 minutes, until edges are set but centers are slightly soft.
  3. Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
