For the raspberry swirl

  • 1 tablespoon lemon juice Enhances the natural tartness of the raspberries.

Method
 

Preparation of Raspberry Swirl
  1. In a saucepan over medium heat, combine frozen raspberries and lemon juice. Cook down until thick and syrup-like, stirring occasionally.
  2. Remove from heat and set aside to cool.
Prepare the Fudge Base
  1. In a double boiler, melt the white chocolate chips gently until smooth.
  2. Stir in the sweetened condensed milk until well combined.
  3. Remove from heat and let cool slightly.
Combine Fudge and Swirl
  1. Spoon half of the fudge mixture into a lined baking dish.
  2. Drizzle half of the raspberry mixture over the fudge and swirl gently using a knife.
  3. Repeat with the remaining fudge and raspberry mixture.
Chill and Serve
  1. Refrigerate for at least 2 hours or until set.
  2. Once set, cut into squares and serve.

Store in an airtight container in the fridge. Proper layering ensures freshness for weeks.
