Preparation of Raspberry Swirl
- In a saucepan over medium heat, combine frozen raspberries and lemon juice. Cook down until thick and syrup-like, stirring occasionally.
- Remove from heat and set aside to cool.
Prepare the Fudge Base
- In a double boiler, melt the white chocolate chips gently until smooth.
- Stir in the sweetened condensed milk until well combined.
- Remove from heat and let cool slightly.
Combine Fudge and Swirl
- Spoon half of the fudge mixture into a lined baking dish.
- Drizzle half of the raspberry mixture over the fudge and swirl gently using a knife.
- Repeat with the remaining fudge and raspberry mixture.
Chill and Serve
- Refrigerate for at least 2 hours or until set.
- Once set, cut into squares and serve.
